You’re in a Scramble

What’s for dinner? You’re tired and a little hungry. Reach for the eggs. They’re fast and warm. This is a T-Man go-to meal. The best part about making eggs is that the cleanup takes seconds.

INGREDIENTS

  • 6-8 eggs
  • 3 tablespoons unsalted butter
  • 1/4 cup milk or heavy cream
  • Dry or fresh herbs (optional)
  • Cheese, shredded (optional)
  • Salt and  pepper

DIRECTIONS

  1. In a large bowl crack open eggs. Add salt, pepper and milk.
  2. Heat large skillet over medium heat and add 2 tablespoons butter.
  3. Add egg mixture, then cook for 1 minute.
  4. Add optional ingredients after one minute and stir with a wooden spoon until eggs are fluffy.
  5. Top with 1 tablespoon of butter and mix in.
  6. Serve warm with English muffin or toast. (I prefer butter or honey on my bread.)

TIP

While cooking the eggs, the lower the heat you use, the more tender they will be and the lighter they will taste.
