Apple Crisp Ice Cream Topping

Not many people have the time to bake in the kitchen, however we all love homemade desserts. This apple crisp topping paired with some vanilla bean ice cream takes no time at all to prepare. I prefer to use Granny Smith apples in the topping, but any fruit will do. Choose what’s in season and you won’t go wrong.

INGREDIENTS

  • 1/2 cup flour
  • 1 cup rolled oats (do not use instant oatmeal)
  • 1/2 cup light brown sugar
  • 1/2 cup brown sugar
  • 3 tablespoons cinnamon
  • 1/4 teaspoon salt
  • 1 stick butter cut into 1 inch slices
  • 5 Granny Smith apples, peeled, cored and cut into 6 wedges
  • Juice of 1 small lemon
  • 2 tablespoons sugar
  • 1 pint of ice cream (I prefer vanilla)

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Mix all ingredients together except ice cream.
  3. Spread a 2 inch thick layer of the mixture into the bottom of a 9 inch x 13 inch baking dish greased with butter.
  4. Bake for 45 minutes until apples are soft.
  5. Remove from oven. Add a scoopful of crisp topping then ice cream, alternating layers of each, to a parfait or large glass (even a pilsner glass works in a pinch.)
  6. Serve warm. Enjoy.

TIP

Apple crisp can be made ahead of time and stored in the refrigerator so you can have it on hand for those late night trips to the fridge or freezer.
