Nuts! Mini Cakes

Okay, TASTOSTERONE guys, it’s okay to make these dainty desserts for your family and holiday guests. Open up; show your softer, more sensitive side. take it from buddy on TLC’s “Cake Boss”, it’s hotter to move away from the grill and heat things up in the oven.

INGREDIENTS

SHELL

  •  1/4 lb. unsalted butter
  • 3 oz. cream cheese (room temperature)
  • 1 cup flour

FILLING

3/4 cups brown sugar
2/3 cups chopped walnuts
1 tablespoon unsalted butter (room temperature)
1 teaspoon vanilla extract
1 egg (room temperature)
Pinch salt

INSTRUCTIONS

  1. Preheat oven to 325 degrees.
  2. Using an electric or hand mixer, mix all shell ingredients, then roll into 1 tablespoon size balls and set aside. Makes 24 balls.
  3. Mix all filling ingredients together with a whisk.
  4. Spray small cupcake tins with non-stick baking spray.
  5. Press large balls of crust into each tin, pressing up sides and filling entire muffin walls.
  6. Spoon filling and distribute filling evenly into all 24 cups.
  7. Bake for 40-45 minutes in 325-degree oven until golden brown.
  8. Remove from oven or let cool. Remove from tin and serve or freeze
