Sandies

Sandies are a cookie classic. Serve with your favorite coffee, cappuccino or espresso.

INGREDIENTS

  • 4 1/2 cups all purpose-flour
  • 1 pound unsalted butter, softened (leave out for about 30 minutes to soften before baking)
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup walnuts, roughly chopped
  • 1 cup powdered sugar, plus 2 tablespoons for garnish

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Cream sugar and butter, then add the remaining ingredients.
  3. Shape batter into 1 inch balls and place 2 inches apart on a nonstick baking pan. (I place a sheet of parchment paper on the pan to make cleanup a snap.)
  4. Bake for 20 minutes.
  5. Remove from oven and sprinkle with powdered sugar.
  6. Let cool, then serve.

TIP

The way to cream your ingredients is to use your mixer at medium speed and beat the ingredients together until they are light and fluffy. This technique helps the sugar to dissolve and beats air into the butter giving it a fluffy texture.
