Chili Sauce = Meatballs and Potatoes

With some slaw on the side, these meatballs and potatoes are a crowd pleaser. If my retired dad can whip this up with confidence, so can you.

INGREDIENTS

  • 1 1/2-pound ground beef or any ground meat
  • 1 small onion, grated
  • 1 onion, diced
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 piece of bread
  • 2 tablespoons milk
  • 1 bottle chili sauce (I prefer Heinz)
  • 3-4 potatoes sliced into 2 inch quarters

DIRECTIONS

  1. Preheat oven to 325°F.
  2. Place milk in a bowl. Soak both sides of bread in milk. Squeeze bread as you would ring out a sponge.
  3. In another bowl, combine meat, egg that has been whipped with a fork, grated onion, salt, pepper, and bread. Shape mixture into meatballs about 2 inches in diameter.
  4. In a large casserole pot, mix diced onions, chili sauce and ketchup.
  5. Place meatballs in pot on top of diced onion and chili sauce then place potatoes over meatballs. Don’t mix; leave in layers.
  6. Cover pot and bake for 2 hours. Do not stir during the first hour of cooking or meatballs will fall apart. After one hour, gently toss sauce, potatoes and meatballs.
  7. Remove from the oven and serve.
