Rack Up the Lamb

The game is on! Rack of lamb is a tender dish that will help rack up the brownie points in any relationship.

INGREDIENTS

  • 1 rack of lamb (American or New Zealand)
  • 1 garlic clove, thinly sliced
  • 2-3 tablespoons Dijon-style mustard
  • 1 cup seasoned breadcrumbs
  • 1/2 cup Parmigiano-Reggiano cheese, grated
  • 3 tablespoons olive oil
  • 1 tablespoon unsalted butter

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Line a baking sheet with non-stick foil.
  3. Season lamb with salt and pepper.
  4. Using a small sharp knife, cut small slits into the top of the lamb. Place the garlic slices into the slits.
  5. Spread mustard over the entire rack of lamb.
  6. In a separate bowl, mix together breadcrumbs, parsley and cheese. Coat rack of lamb with mixture, pressing it into the mustard.
  7. Drizzle olive oil on top of breadcrumb mixture.
  8. Top lamb with pats of butter.
  9. Place lamb on baking sheet. Cook for 30 – 45 minutes depending on how you prefer your meat done.
  10. Remove from oven. Let meat rest for 15 minutes then cut into 2 sections.
