Chicken Marsala Magic

For new parents experiencing sleepless nights, this dish makes it possible to prepare something delicious and quick. You don’t have to wait until a special occasion to make this meal and it can even make a groggy night something romantic.


  • Four 4-ounce boneless skinless (optional) chicken breast halves (Your butcher can do this for you.)
  • 3 tablespoons flour seasoned with salt and pepper
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 pound white mushrooms, cleaned, stems removed, and sliced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken stock or broth
  • 3 tablespoons fresh parsley, chopped
  • Salt and pepper


  1. Place flour in a plastic bag and season with salt and pepper.
  2. Coat chicken with flour and shake off excess.
  3. Preheat sauté pan over medium heat. Add oil and 2 tablespoons butter to the pan.
  4. Place chicken in pan and cook for 4 minutes per side.
  5. Don’t overcook or chicken will be tough.
  6. Remove chicken with tongs and set aside on plate.
  7. Add mushrooms to the pan and cook for 5 minutes.
  8. Add wine and reduce for 2 minutes while scraping up bits of chicken with a wooden spoon.
  9. Add chicken stock and cook for 5 minutes.
  10. Add parsley and remaining 2 tablespoons butter. Cook for a minute.
  11. Return chicken to pan and coat with sauce.
  12. Add salt and pepper to taste.
  13. Serve with rice or pasta.
