Soy Sauce + Sake = Glazed Cod

Sake is a wonderful addition to fish, opening up a whole new world of tastes. Make sure to only use sake that you would drink in your cooking as it does make a difference in the flavor.


  • 1 tablespoon vegetable oil
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons sake
  • 3 tablespoons honey
  • 2 tablespoons dark miso paste
  • 4 black cod fillets
  • 1 tablespoon sesame seeds (optional)


  1. In a sauté pan large enough to hold the fish, combine all ingredients except fish and simmer for 5 minutes then cool down.
  2. Place fish into the pan, coat both sides in the sauce then cover and marinate in refrigerator for 4 hours.
  3. Remove from refrigerator. Over medium high heat, sear the fish for 4 minutes per side or broil for 5 – 8 minutes.
  4. Serve with Japanese-style white rice and garnish with sesame seeds (optional).
