Swiss Mac & Cheese

Once you try a Swiss-influenced macaroni and cheese recipe, there will be no turning back. Young or old, everyone craves this cheesy comfort food.


  • 6 cups milk, whole or low fat
  • 1 teaspoon salt
  • 1 package of elbow macaroni or any other type of pasta
  • 1 1/2 cups Gruyère cheese, grated
  • 2 teaspoons pepper
  • 1 1/2 sticks unsalted butter
  • 2 small onions, sliced
  • 1 shallot, sliced
  • 1 garlic clove, chopped


  1. Heat milk and salt in a large pot over high heat until boiling.
  2. Add macaroni or pasta, reduce heat and simmer uncovered. Cook for 20 minutes, stirring occasionally. Pasta should soften. Add additional milk if needed.
  3. Preheat oven to 350°F and place an empty casserole dish or ovenproof pot in the oven.
  4. Pour pasta (do not drain) into preheated pot. Add cheese and pepper to the mixture and stir.
  5. Cover and bake for 10 minutes.
  6. While pasta is baking, melt butter over medium heat in medium sauté pan. Add onions and garlic. Heat until very crispy. Top the pasta and cheese with the sautéed onion mixture.
  7. Bake in 400°F oven for 5 minutes or until pasta is brown.
  8. Remove from oven and serve.
