Recycled Fried Rice

No one likes to throw away food. These days everything is so expensive. Why not think of creative ways to reinvent last night’s dinner? Try this recipe and you’ll be making extra rice just to recycle your leftovers.


  • 1-2 cups cooked rice (rice left over from your Chinese take-out also works great)
  • 1 red pepper, diced
  • 3 scallions, sliced. Reserve 1 tablespoon for garnish.
  • 2 tablespoons vegetable oil
  • 1 crushed chicken bouillon cube
  • 1 cup of hot water
  • 2 slices of cooked bacon, crumbled (optional)
  • 1 tablespoon butter
  • 2 eggs, lightly beaten
  • 2 tablespoon soy sauce


  1. In a medium sauté pan, over medium heat, add oil.
  2. When oil is hot add your vegetables and sauté, stirring with a wooden spoon for 5 minutes.
  3. Add crushed chicken bouillon and water. Mix.
  4. Add rice. Add bacon, if desired. Mix.
  5. In another non-stick small sauté pan, over medium heat, melt butter then add beaten eggs.
  6. Lightly scramble the eggs for 1 minute then add to rice mixture.
  7. Top with soy sauce and the reserved scallions.
  8. Plate and enjoy.
