Arugula Salad

INGREDIENTS

  • 2 cups fresh arugula, chopped
  • 1/4 cup Parmesan cheese (use a carrot peeler to shave off slices of cheese)
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper

DIRECTIONS

  1. Chop arugula and place in a bowl.
  2. Top with Parmesan cheese and drizzle with oil. Toss.
  3. Add salt and pepper to taste and serve.

TIPS

  • This salad has stand alone power and also works as a great side with some cured meats such as salami or prosciutto.
  • Compliment your creation with a glass of full-bodied red wine.
